Ingredients:
- 2 cups (250g) All-Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 3/4 cup (150g) Granulated Sugar
- 1 cup (85g) Shredded Coconut, sweetened or unsweetened
- 2 Large Eggs
- 1/2 cup (120ml) Vegetable Oil (or melted coconut oil)
- 1/2 cup (120ml) Coconut Milk (full-fat recommended)
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Coconut Extract (optional, for enhanced flavor)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, sugar, and shredded coconut. Ensure everything is evenly distributed.
- In a separate bowl, whisk together eggs, oil, coconut milk, vanilla extract, and coconut extract (if using).
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix. A few lumps are fine.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
