Ingredients:

  • 2 cups (250g) All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 3/4 cup (150g) Granulated Sugar
  • 1 cup (85g) Shredded Coconut, sweetened or unsweetened
  • 2 Large Eggs
  • 1/2 cup (120ml) Vegetable Oil (or melted coconut oil)
  • 1/2 cup (120ml) Coconut Milk (full-fat recommended)
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Coconut Extract (optional, for enhanced flavor)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, sugar, and shredded coconut. Ensure everything is evenly distributed.
  3. In a separate bowl, whisk together eggs, oil, coconut milk, vanilla extract, and coconut extract (if using).
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix. A few lumps are fine.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
