Ingredients:
- 2 cups rolled oats (180 g)
- 1 cup unsalted nuts (almonds, walnuts, or pecans), chopped (120 g)
- 1/2 cup honey or maple syrup (120 ml)
- 1/2 cup almond butter or peanut butter (128 g)
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup dried fruits (raisins, cranberries, or apricots), chopped (75 g)
- 1/4 cup chocolate chips (optional) (45 g)
Instructions:
- Preheat the oven to 350°F (175°C).
- Line the baking dish with parchment paper, leaving an overhang for easy removal.
- In a large bowl, combine rolled oats, chopped nuts, and salt.
- In a separate bowl, whisk together the honey (or maple syrup), almond butter, and vanilla extract.
- Pour the wet mixture over the dry ingredients and stir until fully incorporated.
- Fold in dried fruits and chocolate chips (if using).
- Transfer the mixture to the prepared baking dish, pressing it down firmly into an even layer.
- Bake for 20 minutes or until golden brown.
- Cool in the pan for 10 minutes, then lift out using parchment and slice into bars.
- Chill for at least 30 minutes to firm up before serving.
