Ingredients:

  • 2 cups rolled oats (180 g)
  • 1 cup unsalted nuts (almonds, walnuts, or pecans), chopped (120 g)
  • 1/2 cup honey or maple syrup (120 ml)
  • 1/2 cup almond butter or peanut butter (128 g)
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dried fruits (raisins, cranberries, or apricots), chopped (75 g)
  • 1/4 cup chocolate chips (optional) (45 g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line the baking dish with parchment paper, leaving an overhang for easy removal.
  3. In a large bowl, combine rolled oats, chopped nuts, and salt.
  4. In a separate bowl, whisk together the honey (or maple syrup), almond butter, and vanilla extract.
  5. Pour the wet mixture over the dry ingredients and stir until fully incorporated.
  6. Fold in dried fruits and chocolate chips (if using).
  7. Transfer the mixture to the prepared baking dish, pressing it down firmly into an even layer.
  8. Bake for 20 minutes or until golden brown.
  9. Cool in the pan for 10 minutes, then lift out using parchment and slice into bars.
  10. Chill for at least 30 minutes to firm up before serving.
