Ingredients:
- 1.25 lbs (567g) Salmon fillet, skinless and boneless, cut into 1-inch cubes
- 1 tbsp (15ml) Olive oil
- 1/4 tsp (1.5ml) Salt
- 1/8 tsp (0.75ml) Black pepper
- 1/4 cup (60ml) Honey
- 3 tbsp (45ml) Soy sauce, low sodium
- 2 tbsp (30ml) Rice vinegar
- 2 cloves Garlic, minced
- 1 tsp (5ml) Fresh ginger, grated
- 1/2 tsp (2.5ml) Sesame oil
- 1/4 tsp (1.5ml) Red pepper flakes (optional, for heat)
- 1 tbsp (8g) Cornstarch, mixed with 2 tbsp (30ml) cold water (slurry)
- Sesame seeds (optional)
- Chopped green onions (optional)
Instructions:
- Cut the salmon fillet into roughly 1-inch cubes. Place in a bowl and toss with olive oil, salt, and pepper.
- In a separate bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes (if using).
- Heat a large skillet or wok over medium-high heat. Add the salmon bites in a single layer (work in batches if necessary to avoid overcrowding). Cook for 3-4 minutes per side, or until cooked through and lightly browned.
- Pour the honey garlic glaze over the cooked salmon bites. Bring to a simmer and then add the cornstarch slurry. Cook, stirring constantly, until the glaze thickens and coats the salmon bites evenly. This will take about 1-2 minutes.
- Remove from heat. Garnish with sesame seeds and chopped green onions (if desired). Serve immediately.
