Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp (15 ml) olive oil
  • 1/2 tsp (2.5 ml) salt
  • 1/4 tsp (1.25 ml) black pepper
  • 1/4 tsp (1.25 ml) garlic powder
  • 1/4 cup (60 ml) honey
  • 1/4 cup (60 ml) Dijon mustard
  • 2 tbsp (30 ml) mayonnaise
  • 1 tbsp (15 ml) apple cider vinegar
  • 4 large flour tortillas
  • 1 cup (85g) shredded lettuce
  • 1/2 cup (50g) shredded carrots
  • 1/2 cup (50g) diced tomatoes

Instructions:

  1. Season chicken with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken to the skillet and cook until cooked through, about 6-8 minutes, ensuring internal temperature reaches 165°F (74°C). Remove from heat.
  3. In a small bowl, whisk together honey, Dijon mustard, mayonnaise, and vinegar until smooth.
  4. Warm the tortillas lightly, if desired (microwave for 10-15 seconds). Spread a layer of honey mustard sauce on each tortilla.
  5. Add lettuce, carrots, tomatoes, and cooked chicken to the center of each tortilla.
  6. Fold in the sides of the tortilla and roll it up tightly.
  7. Cut in half (optional) and serve immediately!
