Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp (15 ml) olive oil
- 1/2 tsp (2.5 ml) salt
- 1/4 tsp (1.25 ml) black pepper
- 1/4 tsp (1.25 ml) garlic powder
- 1/4 cup (60 ml) honey
- 1/4 cup (60 ml) Dijon mustard
- 2 tbsp (30 ml) mayonnaise
- 1 tbsp (15 ml) apple cider vinegar
- 4 large flour tortillas
- 1 cup (85g) shredded lettuce
- 1/2 cup (50g) shredded carrots
- 1/2 cup (50g) diced tomatoes
Instructions:
- Season chicken with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until cooked through, about 6-8 minutes, ensuring internal temperature reaches 165°F (74°C). Remove from heat.
- In a small bowl, whisk together honey, Dijon mustard, mayonnaise, and vinegar until smooth.
- Warm the tortillas lightly, if desired (microwave for 10-15 seconds). Spread a layer of honey mustard sauce on each tortilla.
- Add lettuce, carrots, tomatoes, and cooked chicken to the center of each tortilla.
- Fold in the sides of the tortilla and roll it up tightly.
- Cut in half (optional) and serve immediately!
