Ingredients:
- 1 pint Strawberries, hulled and halved or quartered
- 1 cup Blueberries, rinsed
- 1 cup Raspberries, gently rinsed
- 2 large ripe but firm Peaches or Nectarines, pitted and diced
- 3 medium Kiwi Fruit, peeled and sliced or quartered
- 1 cup Green Grapes, halved lengthwise
- 1/4 cup freshly squeezed Lime Juice
- 2 tablespoons good quality, runny Honey
- 1 teaspoon finely grated Lime Zest
- 2 tablespoons finely chopped Fresh Mint
- Pinch of Sea Salt
Instructions:
- Thoroughly wash all berries and grapes. Hull and slice the strawberries. Dice the peaches/nectarines and slice the kiwi. Keep delicate raspberries separate for now.
- Place the strawberries, blueberries, grapes, and stone fruit into the large mixing bowl.
- In a small bowl or jar, whisk together the lime juice, honey, lime zest, and sea salt until the honey is fully emulsified. Gently warm the honey if it is too thick.
- Pour about three-quarters of the dressing over the sturdy fruit mixture. Gently toss everything together until just coated.
- Gently fold in the raspberries. Add the fresh mint and the remaining dressing, tossing once more very carefully.
- Cover the bowl and refrigerate for at least 15 minutes to allow the flavours to meld.
- Give the salad one final, gentle stir before serving immediately in individual bowls or presenting it in a glass bowl.
