Ingredients:

  • 1/3 cup honey
  • 2 tbsp soy sauce (low sodium)
  • 1 tbsp apple cider vinegar
  • 3 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes
  • 1/4 tsp black pepper
  • 1.5 lbs boneless skinless chicken thighs
  • 1 tbsp vegetable oil
  • 1 tsp kosher salt
  • 1 large lemon, sliced in half

Instructions:

  1. Whisk together the honey, soy sauce, apple cider vinegar, minced garlic, red pepper flakes, and black pepper in a small bowl and set aside.
  2. Pat the chicken thighs dry with paper towels and season with salt and vegetable oil.
  3. Preheat the grill to medium-high heat (approx. 400°F/200°C). Place thighs on the grate and sear for 5–6 minutes per side until the internal temperature reaches about 150°F (65°C).
  4. Place the lemon halves cut-side down on the grill.
  5. During the final 3 minutes of cooking, generously brush the glaze onto both sides of the chicken, rotating frequently to avoid burning.
  6. Remove the chicken from the grill when the internal temperature hits 175°F (80°C).
