Ingredients:
- 2 cups all-purpose flour (240g) - plus more for kneading
- 3 large eggs (150g)
- 1/2 teaspoon salt (3g)
- 1 tablespoon olive oil (15ml)
Instructions:
- Measure the flour and salt; place on your work surface or in a bowl.
- Form a well in the center of the flour.
- Crack the eggs into the well; add olive oil if using.
- Using a fork, whisk the eggs gently, incorporating flour from the edges.
- Once mixed, knead the dough until smooth (about 8-10 minutes).
- Wrap the dough in plastic wrap and let it rest for 30 minutes.
- Divide the dough into 4 equal pieces.
- Using a rolling pin or pasta machine, roll out one piece until thin (about 1/16 inch).
- Dust with flour as needed to prevent sticking.
- Cut the rolled dough into your desired shape (fettuccine, tagliatelle, etc.).
- Toss with a bit of flour to prevent sticking.
- Bring a large pot of salted water to a boil.
- Add the pasta; cook for 3-4 minutes or until al dente.
- Drain and toss immediately with your choice of sauce.
