Ingredients:

  • 2 cups all-purpose flour (240g) - plus more for kneading
  • 3 large eggs (150g)
  • 1/2 teaspoon salt (3g)
  • 1 tablespoon olive oil (15ml)

Instructions:

  1. Measure the flour and salt; place on your work surface or in a bowl.
  2. Form a well in the center of the flour.
  3. Crack the eggs into the well; add olive oil if using.
  4. Using a fork, whisk the eggs gently, incorporating flour from the edges.
  5. Once mixed, knead the dough until smooth (about 8-10 minutes).
  6. Wrap the dough in plastic wrap and let it rest for 30 minutes.
  7. Divide the dough into 4 equal pieces.
  8. Using a rolling pin or pasta machine, roll out one piece until thin (about 1/16 inch).
  9. Dust with flour as needed to prevent sticking.
  10. Cut the rolled dough into your desired shape (fettuccine, tagliatelle, etc.).
  11. Toss with a bit of flour to prevent sticking.
  12. Bring a large pot of salted water to a boil.
  13. Add the pasta; cook for 3-4 minutes or until al dente.
  14. Drain and toss immediately with your choice of sauce.
