Ingredients:

  • 4 cups fresh sweet corn kernels
  • 1 cup red bell pepper, finely diced
  • 1 cup green bell pepper, finely diced
  • 1/2 cup white onion, finely minced
  • 1/2 cup celery, finely diced
  • 3/4 cup apple cider vinegar
  • 1/2 cup granulated sugar
  • 1 tbsp kosher salt
  • 1 tsp mustard seed
  • 1/2 tsp turmeric powder
  • 1/4 tsp celery seed
  • 1/2 tsp black pepper

Instructions:

  1. Finely dice the red bell pepper, green bell pepper, white onion, and celery to a uniform size of approximately 1/4 inch. Place them in a large, thick-bottomed stainless steel pot.
  2. Add the corn kernels, apple cider vinegar, granulated sugar, kosher salt, mustard seed, turmeric powder, celery seed, and black pepper to the pot with the diced vegetables.
  3. Bring the mixture to a brisk boil over medium-high heat.
  4. Reduce heat to a simmer and cook for 10 to 15 minutes, stirring occasionally, until the liquid has slightly reduced and vegetables are translucent but still hold their shape.
  5. Remove from heat immediately and allow the relish to cool to room temperature in the pot to let the flavors meld before transferring to sterilized glass jars.
