Ingredients:
- 4 cups fresh sweet corn kernels
- 1 cup red bell pepper, finely diced
- 1 cup green bell pepper, finely diced
- 1/2 cup white onion, finely minced
- 1/2 cup celery, finely diced
- 3/4 cup apple cider vinegar
- 1/2 cup granulated sugar
- 1 tbsp kosher salt
- 1 tsp mustard seed
- 1/2 tsp turmeric powder
- 1/4 tsp celery seed
- 1/2 tsp black pepper
Instructions:
- Finely dice the red bell pepper, green bell pepper, white onion, and celery to a uniform size of approximately 1/4 inch. Place them in a large, thick-bottomed stainless steel pot.
- Add the corn kernels, apple cider vinegar, granulated sugar, kosher salt, mustard seed, turmeric powder, celery seed, and black pepper to the pot with the diced vegetables.
- Bring the mixture to a brisk boil over medium-high heat.
- Reduce heat to a simmer and cook for 10 to 15 minutes, stirring occasionally, until the liquid has slightly reduced and vegetables are translucent but still hold their shape.
- Remove from heat immediately and allow the relish to cool to room temperature in the pot to let the flavors meld before transferring to sterilized glass jars.
