Ingredients:
- 1 cup (240g) creamy almond butter
- 1 cup (200g) brown sugar, packed
- 1 large (60g) egg
- 1 teaspoon (5ml) vanilla extract
- 1 teaspoon (6g) baking soda
- ½ teaspoon (3g) salt
- 1 cup (120g) rolled oats
- ½ cup (90g) chocolate chips or chopped nuts
Instructions:
- In a mixing bowl, combine almond butter and brown sugar until smooth.
- Add the egg and vanilla extract, and mix well until fully incorporated.
- Fold in baking soda and salt; then, add oats and chocolate chips or nuts if using.
- Chill the dough in the refrigerator for 30 minutes to firm up.
- Preheat oven to 350°F (175°C) while the dough chills.
- Remove chilled dough, then portion out cookies on a lined cookie sheet using a cookie scoop or tablespoon.
- Bake for 12-15 minutes or until edges are lightly golden.
- Cool on the cookie sheet for 5 minutes then transfer to a wire rack.
