Ingredients:

  • 1 lb breakfast sausage, crumbled
  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups cubed day-old bread
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers
  • ½ cup chopped green onions
  • ½ cup diced tomatoes, drained (optional)
  • Additional shredded cheese (for browning)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a skillet over medium heat, cook the crumbled sausage until fully browned, about 5-7 minutes. Drain excess fat and set aside.
  2. In a large mixing bowl, whisk together eggs, milk, salt, and black pepper until well combined.
  3. Stir in the cooked sausage, cubed bread, shredded cheese, diced bell peppers, and green onions into the egg mixture. Mix until evenly coated.
  4. Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  5. Cover with plastic wrap and refrigerate for at least 30 minutes (or overnight for deeper flavor).
  6. Preheat the oven to 350°F (175°C). Remove cover and bake for 45-50 minutes, or until the top is golden and a knife inserted comes out clean.
  7. Let cool for a few minutes before slicing. Garnish with parsley if desired.
