Ingredients:
- 1 lb breakfast sausage, crumbled
- 8 large eggs
- 2 cups whole milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 cups cubed day-old bread
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers
- ½ cup chopped green onions
- ½ cup diced tomatoes, drained (optional)
- Additional shredded cheese (for browning)
- Fresh parsley, chopped (for garnish)
Instructions:
- In a skillet over medium heat, cook the crumbled sausage until fully browned, about 5-7 minutes. Drain excess fat and set aside.
- In a large mixing bowl, whisk together eggs, milk, salt, and black pepper until well combined.
- Stir in the cooked sausage, cubed bread, shredded cheese, diced bell peppers, and green onions into the egg mixture. Mix until evenly coated.
- Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
- Cover with plastic wrap and refrigerate for at least 30 minutes (or overnight for deeper flavor).
- Preheat the oven to 350°F (175°C). Remove cover and bake for 45-50 minutes, or until the top is golden and a knife inserted comes out clean.
- Let cool for a few minutes before slicing. Garnish with parsley if desired.
