Ingredients:
- 8 large eggs (approximately 480g)
- 1 cup (150g) cooked breakfast sausage, crumbled (or vegetarian sausage if preferred)
- 1 cup (150g) shredded cheddar cheese
- 1/2 cup (75g) diced bell pepper (any color)
- 1/2 cup (75g) diced onion
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas (10-inch or 25 cm)
- Optional: Fresh salsa or hot sauce for serving
Instructions:
- In a mixing bowl, crack and whisk the eggs until thoroughly combined.
- Season with salt and pepper.
- Heat a skillet over medium heat.
- Add diced onion and bell pepper; sauté until softened (about 3-4 minutes).
- Stir in the crumbled sausage and cook until heated through and lightly browned.
- Pour the beaten eggs into the skillet.
- Gently stir with a spatula, cooking until eggs are just set (about 3-4 minutes).
- Sprinkle in cheese, stirring until melted.
- Lay a tortilla flat, scoop about 1 cup of the filling into the center.
- Fold in the sides, then roll up from the bottom, enclosing the filling.
- Return burrito to the skillet, seam-side down, and warm for 2-3 minutes on each side until golden brown.
