Ingredients:

  • 8 large eggs (approximately 480g)
  • 1 cup (150g) cooked breakfast sausage, crumbled (or vegetarian sausage if preferred)
  • 1 cup (150g) shredded cheddar cheese
  • 1/2 cup (75g) diced bell pepper (any color)
  • 1/2 cup (75g) diced onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas (10-inch or 25 cm)
  • Optional: Fresh salsa or hot sauce for serving

Instructions:

  1. In a mixing bowl, crack and whisk the eggs until thoroughly combined.
  2. Season with salt and pepper.
  3. Heat a skillet over medium heat.
  4. Add diced onion and bell pepper; sauté until softened (about 3-4 minutes).
  5. Stir in the crumbled sausage and cook until heated through and lightly browned.
  6. Pour the beaten eggs into the skillet.
  7. Gently stir with a spatula, cooking until eggs are just set (about 3-4 minutes).
  8. Sprinkle in cheese, stirring until melted.
  9. Lay a tortilla flat, scoop about 1 cup of the filling into the center.
  10. Fold in the sides, then roll up from the bottom, enclosing the filling.
  11. Return burrito to the skillet, seam-side down, and warm for 2-3 minutes on each side until golden brown.
