Ingredients:

  • 1 cup (240g) frozen pumpkin puree
  • 1 medium frozen banana
  • 3/4 cup (180 ml) unsweetened almond or oat plant-based milk
  • 1 scoop (approx. 30g) vanilla protein powder (optional)
  • 1 tablespoon (15g) chia seeds or flaxseed meal
  • 1 teaspoon (5g) pumpkin pie spice mix
  • 1/2 teaspoon pure vanilla extract
  • 1-2 teaspoons maple syrup or 2 pitted Medjool dates (optional sweetener)

Instructions:

  1. Pour the plant-based milk and vanilla extract into the base of your blender jug.
  2. Spoon in the protein powder, chia seeds/flaxseed, and pumpkin pie spice mix.
  3. Add the frozen pumpkin puree, frozen banana pieces, and any optional sweetener (maple syrup or dates).
  4. Secure the lid. Begin blending on a low setting, gradually increasing to high speed, using the tamper to push ingredients toward the blades if necessary.
  5. Blend until the mixture is completely smooth and creamy. If too thick, add an extra splash (about 30ml/2 Tbsp) of milk and blend briefly.
  6. Serve immediately, garnished with toasted pecans or a dusting of cinnamon.
