Ingredients:
- 1 cup (240g) frozen pumpkin puree
- 1 medium frozen banana
- 3/4 cup (180 ml) unsweetened almond or oat plant-based milk
- 1 scoop (approx. 30g) vanilla protein powder (optional)
- 1 tablespoon (15g) chia seeds or flaxseed meal
- 1 teaspoon (5g) pumpkin pie spice mix
- 1/2 teaspoon pure vanilla extract
- 1-2 teaspoons maple syrup or 2 pitted Medjool dates (optional sweetener)
Instructions:
- Pour the plant-based milk and vanilla extract into the base of your blender jug.
- Spoon in the protein powder, chia seeds/flaxseed, and pumpkin pie spice mix.
- Add the frozen pumpkin puree, frozen banana pieces, and any optional sweetener (maple syrup or dates).
- Secure the lid. Begin blending on a low setting, gradually increasing to high speed, using the tamper to push ingredients toward the blades if necessary.
- Blend until the mixture is completely smooth and creamy. If too thick, add an extra splash (about 30ml/2 Tbsp) of milk and blend briefly.
- Serve immediately, garnished with toasted pecans or a dusting of cinnamon.
