Ingredients:

  • 2 large ripe bananas (approx. 300g)
  • 0.25 cup natural creamy peanut butter (65g)
  • 0.5 cup dark chocolate chips, 60% cacao (90g)
  • 1 tsp coconut oil (5g)
  • 1 tsp flaky sea salt (optional garnish)
  • 1 tbsp crushed roasted peanuts (optional garnish)

Instructions:

  1. Line a large baking sheet with parchment paper. Peel the bananas and slice them into uniform rounds, roughly 1/4-inch thick.
  2. Lay half of the banana slices on the sheet. Place about 1/2 teaspoon of peanut butter onto the center of each slice, then top with the remaining banana slices to create a sandwich.
  3. Flash freeze the banana sandwiches on the tray for at least 30 minutes to ensure the peanut butter is firm.
  4. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Heat in 20-second intervals, stirring between each, until completely smooth.
  5. Using a fork, submerge each frozen banana sandwich into the melted chocolate. Tap the fork against the bowl to remove excess chocolate.
  6. Return the dipped bites to the parchment paper and immediately sprinkle with sea salt or crushed peanuts if desired.
  7. Freeze for an additional 30 minutes until the chocolate shell is firm and snappy.
