Ingredients:
- 2 large ripe bananas (approx. 300g)
- 0.25 cup natural creamy peanut butter (65g)
- 0.5 cup dark chocolate chips, 60% cacao (90g)
- 1 tsp coconut oil (5g)
- 1 tsp flaky sea salt (optional garnish)
- 1 tbsp crushed roasted peanuts (optional garnish)
Instructions:
- Line a large baking sheet with parchment paper. Peel the bananas and slice them into uniform rounds, roughly 1/4-inch thick.
- Lay half of the banana slices on the sheet. Place about 1/2 teaspoon of peanut butter onto the center of each slice, then top with the remaining banana slices to create a sandwich.
- Flash freeze the banana sandwiches on the tray for at least 30 minutes to ensure the peanut butter is firm.
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Heat in 20-second intervals, stirring between each, until completely smooth.
- Using a fork, submerge each frozen banana sandwich into the melted chocolate. Tap the fork against the bowl to remove excess chocolate.
- Return the dipped bites to the parchment paper and immediately sprinkle with sea salt or crushed peanuts if desired.
- Freeze for an additional 30 minutes until the chocolate shell is firm and snappy.
