Ingredients:
- 4 large Honeycrisp or Granny Smith apples (approx. 6 oz / 170g each)
- 1 tbsp lemon juice
- 2 tbsp water or unsweetened apple cider
- 1/2 cup old-fashioned rolled oats
- 1/4 cup crushed walnuts
- 1 tsp ground cinnamon
- 1 tbsp maple syrup
- 1 tbsp coconut oil
- 1/4 tsp sea salt
Instructions:
- Preheat oven to 375°F (190°C). Use an apple corer to remove the center of each apple, creating a clean hollow cylinder without puncturing the bottom. Brush the interior with lemon juice to prevent browning.
- In a small mixing bowl, stir together the rolled oats, crushed walnuts, ground cinnamon, maple syrup, melted coconut oil, and sea salt until the oats are evenly coated.
- Place the cored apples upright in a 9x9 inch baking dish and pour water or unsweetened apple cider into the bottom of the dish.
- Spoon the oat filling generously into the center of each apple, pressing down slightly. Bake for 40–45 minutes until the apples are tender and the topping is golden brown.
