Ingredients:

  • 4 large Honeycrisp or Granny Smith apples (approx. 6 oz / 170g each)
  • 1 tbsp lemon juice
  • 2 tbsp water or unsweetened apple cider
  • 1/2 cup old-fashioned rolled oats
  • 1/4 cup crushed walnuts
  • 1 tsp ground cinnamon
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1/4 tsp sea salt

Instructions:

  1. Preheat oven to 375°F (190°C). Use an apple corer to remove the center of each apple, creating a clean hollow cylinder without puncturing the bottom. Brush the interior with lemon juice to prevent browning.
  2. In a small mixing bowl, stir together the rolled oats, crushed walnuts, ground cinnamon, maple syrup, melted coconut oil, and sea salt until the oats are evenly coated.
  3. Place the cored apples upright in a 9x9 inch baking dish and pour water or unsweetened apple cider into the bottom of the dish.
  4. Spoon the oat filling generously into the center of each apple, pressing down slightly. Bake for 40–45 minutes until the apples are tender and the topping is golden brown.
