Ingredients:
- 1.5 cups (180g) almond flour
- 1 cup (90g) oat flour
- 0.25 cup (55g) melted coconut oil
- 2 tbsp (30ml) maple syrup
- 0.25 tsp (1.5g) sea salt
- 6 cups (900g) peeled and sliced Granny Smith or Gala apples
- 0.33 cup (80ml) maple syrup
- 1 tbsp (15g) cornstarch
- 1 tbsp (6g) ground cinnamon
- 0.25 tsp (1.5g) ground nutmeg
- 1 tbsp (15ml) lemon juice
- 1 tsp (5ml) vanilla extract
Instructions:
- Combine almond flour, oat flour, and salt in a mixing bowl.
- Cut in the melted coconut oil and 2 tablespoons of maple syrup until the dough resembles coarse crumbs.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
- Toss sliced apples with lemon juice, cinnamon, and nutmeg.
- Whisk the remaining maple syrup, cornstarch, and vanilla extract in a small bowl until smooth, then pour over the apples and toss to coat.
- Pour the apple filling into the prepared crust and smooth the top with a spatula.
- Bake at 375°F (190°C) for 45–50 minutes until the edges are deep mahogany-brown and the filling is bubbling.
- Remove from the oven and let the pie rest for 20 minutes to allow the structure to set.
