Ingredients:
- 6 cups (approx. 1.5 kg) peeled and sliced Granny Smith or Honeycrisp apples
- 1 tbsp (15ml) lemon juice
- 1 tsp (5g) ground cinnamon
- 2 tbsp (30ml) maple syrup
- 1 tsp (5g) vanilla extract
- 1 cup (90g) old-fashioned rolled oats
- 1/2 cup (60g) almond flour
- 1/4 cup (55g) melted coconut oil or grass-fed butter
- 3 tbsp (45ml) maple syrup
- 1 tsp (5g) ground cinnamon
- 1/4 tsp (1.5g) sea salt
- 1/4 cup (30g) chopped walnuts or pecans
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, toss the sliced apples with lemon juice, cinnamon, maple syrup, and vanilla until the mixture is fragrant and coated.
- Pour the apples into a 9x9 inch baking dish, spreading them evenly.
- In a separate small bowl, combine the rolled oats, almond flour, cinnamon, and sea salt.
- Pour in the melted coconut oil and maple syrup, stirring with a fork until the mixture forms clumpy, pea-sized crumbs.
- Fold in chopped walnuts or pecans if using.
- Scatter the topping evenly over the apples without pressing down to allow steam to escape.
- Bake for 35–40 minutes until the edges are bubbling and the topping is deep golden brown.
- Let the dish rest for 10 minutes before serving to allow the juices to set.
