Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) sea salt
- 1/2 cup (120ml) pure maple syrup
- 1/4 cup (60ml) coconut oil, melted
- 1 tsp (5ml) vanilla extract
- 2 medium (300g) firm apples, peeled and grated/diced
Instructions:
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- Peel the apples. Grate one apple finely to create a paste and finely dice the second apple into 1/4 inch pieces. Note: Keep the sizes consistent so they cook evenly.
- In a large mixing bowl, whisk together the rolled oats (180g), cinnamon (5g), baking powder (3g), and sea salt (1.5g).
- Pour in the melted coconut oil (60ml), maple syrup (120ml), and vanilla extract (5ml). Stir until the oats are fully saturated and the mixture looks glossy.
- Gently fold in the grated and diced apples (300g total) until evenly distributed.
- Press the mixture firmly into the prepared pan using the back of a spatula or a flat glass to prevent crumbling.
- Bake for 35-40 minutes until the edges are deep golden brown and the center feels set to a light touch.
- Let the pan cool completely on a wire rack before lifting the parchment and slicing into 8 equal bars.
