Ingredients:

  • 4 (6-ounce) salmon fillets, skin-on (170 g each)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon smoked paprika (5 g)
  • Salt and pepper, to taste
  • Juice of 1 lime (30 ml)
  • 2 ripe mangoes, diced (about 2 cups or 300 g)
  • 1/2 red onion, finely chopped (75 g)
  • 1 red bell pepper, diced (150 g)
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped (15 g)
  • Juice of 1 lime (30 ml)
  • Salt, to taste

Instructions:

  1. In a bowl, combine olive oil, garlic powder, smoked paprika, lime juice, salt, and pepper to prepare the marinade.
  2. Place the salmon fillets in the marinade and let sit for 15 minutes.
  3. In another bowl, combine diced mangoes, red onion, red bell pepper, jalapeño (if using), cilantro, lime juice, and salt to prepare the mango salsa.
  4. Heat the grill to medium-high heat (about 400°F or 200°C).
  5. Place marinated salmon fillets skin-side down on the grill. Cook for 3-5 minutes or until the fish is cooked through and releases easily from the grill.
  6. Plate the grilled salmon and top generously with mango salsa.
