Ingredients:
- 4 (6-ounce) salmon fillets, skin-on (170 g each)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon garlic powder (5 g)
- 1 teaspoon smoked paprika (5 g)
- Salt and pepper, to taste
- Juice of 1 lime (30 ml)
- 2 ripe mangoes, diced (about 2 cups or 300 g)
- 1/2 red onion, finely chopped (75 g)
- 1 red bell pepper, diced (150 g)
- 1 jalapeño, seeded and minced (optional)
- 1/4 cup fresh cilantro, chopped (15 g)
- Juice of 1 lime (30 ml)
- Salt, to taste
Instructions:
- In a bowl, combine olive oil, garlic powder, smoked paprika, lime juice, salt, and pepper to prepare the marinade.
- Place the salmon fillets in the marinade and let sit for 15 minutes.
- In another bowl, combine diced mangoes, red onion, red bell pepper, jalapeño (if using), cilantro, lime juice, and salt to prepare the mango salsa.
- Heat the grill to medium-high heat (about 400°F or 200°C).
- Place marinated salmon fillets skin-side down on the grill. Cook for 3-5 minutes or until the fish is cooked through and releases easily from the grill.
- Plate the grilled salmon and top generously with mango salsa.
