Ingredients:

  • 4 large peaches, halved and pitted (approx. 2 lbs / 900g)
  • 2 tbsp melted unsalted butter
  • 2 tbsp honey or maple syrup
  • 1/4 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 1 quart vanilla bean ice cream
  • 2 tbsp honey (optional)
  • 1/4 cup toasted sliced almonds or crushed cookies (optional)

Instructions:

  1. Cut peaches in half and remove the pits, leaving the halves intact.
  2. In a small bowl, whisk together melted butter, honey, cinnamon, and salt until smooth.
  3. Using a pastry brush, liberally coat the cut side of each peach half with the honey-butter mixture.
  4. Preheat grill or grill pan to medium-high heat and ensure grates are clean and lightly oiled.
  5. Place peaches cut-side down on the grill and cook for 4–6 minutes without moving them until deep mahogany grill marks appear.
  6. Flip the peaches and cook for an additional 2–3 minutes until tender but still holding their shape.
  7. Place two warm peach halves in each serving bowl.
  8. Immediately place a generous scoop of vanilla ice cream in the center of the peaches.
  9. Drizzle with additional honey and sprinkle with toasted almonds or cookie crumble.
