- 3 tablespoons olive oil
- 2 tablespoons lime juice (about 1 lime)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup crumbled queso fresco or shredded cheese
- ¼ cup chopped fresh cilantro
- Lime wedges (for serving)
- Salsa or hot sauce (optional)
Instructions:
- In a mixing bowl, whisk together olive oil, lime juice, cumin, chili powder, garlic powder, salt, and pepper.
- Place chicken breasts in the marinade, ensuring they are fully coated. Cover and refrigerate for 30 minutes.
- Preheat the grill to medium-high heat.
- Remove chicken from marinade and grill for about 6-7 minutes per side, until cooked through (internal temperature should reach 165°F).
- Transfer grilled chicken to a plate and let it rest for 5 minutes.
- Slice grilled chicken and warm tortillas on the grill for about 30 seconds each.
- Layer lettuce, tomatoes, chicken, cheese, and cilantro on each tortilla.
- Serve with lime wedges and salsa/hot sauce on the side.
