  • 1 lb (450 g) boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice (about 1 lime)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup crumbled queso fresco or shredded cheese
  • ¼ cup chopped fresh cilantro
  • Lime wedges (for serving)
  • Salsa or hot sauce (optional)

Instructions:

  1. In a mixing bowl, whisk together olive oil, lime juice, cumin, chili powder, garlic powder, salt, and pepper.
  2. Place chicken breasts in the marinade, ensuring they are fully coated. Cover and refrigerate for 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from marinade and grill for about 6-7 minutes per side, until cooked through (internal temperature should reach 165°F).
  5. Transfer grilled chicken to a plate and let it rest for 5 minutes.
  6. Slice grilled chicken and warm tortillas on the grill for about 30 seconds each.
  7. Layer lettuce, tomatoes, chicken, cheese, and cilantro on each tortilla.
  8. Serve with lime wedges and salsa/hot sauce on the side.
