Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 1/3 cup Buffalo wing sauce
  • 1/4 cup cream cheese, softened
  • 8 slices whole grain bread or your choice
  • 2 cups shredded cheddar cheese
  • 2 tablespoons unsalted butter, softened
  • Chopped green onions or fresh parsley (optional)

Instructions:

  1. In a mixing bowl, combine shredded chicken, Buffalo sauce, and cream cheese until well mixed.
  2. Spread butter on one side of each slice of bread. On the unbuttered side, layer about 1/2 cup of the chicken mixture, then 1/2 cup of shredded cheese. Place a second slice of bread on top, buttered side facing out.
  3. Heat a skillet or griddle over medium heat. Place the sandwiches on the skillet and cook for 3-4 minutes until golden brown. Flip and repeat on the other side until the cheese is melted and bread is golden.
  4. Remove sandwiches from skillet, let cool slightly, then slice. Garnish with chopped green onions or parsley if desired.
