Ingredients:
- 2 cups cooked chicken, shredded or diced
- 1/3 cup Buffalo wing sauce
- 1/4 cup cream cheese, softened
- 8 slices whole grain bread or your choice
- 2 cups shredded cheddar cheese
- 2 tablespoons unsalted butter, softened
- Chopped green onions or fresh parsley (optional)
Instructions:
- In a mixing bowl, combine shredded chicken, Buffalo sauce, and cream cheese until well mixed.
- Spread butter on one side of each slice of bread. On the unbuttered side, layer about 1/2 cup of the chicken mixture, then 1/2 cup of shredded cheese. Place a second slice of bread on top, buttered side facing out.
- Heat a skillet or griddle over medium heat. Place the sandwiches on the skillet and cook for 3-4 minutes until golden brown. Flip and repeat on the other side until the cheese is melted and bread is golden.
- Remove sandwiches from skillet, let cool slightly, then slice. Garnish with chopped green onions or parsley if desired.
