Ingredients:
- 1 lb flank steak or sirloin steak
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon brown sugar
- 1 teaspoon ground black pepper
- 4 cups mixed greens (arugula, spinach, or romaine)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, thinly sliced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- 1 avocado, sliced
- 3 tablespoons olive oil for dressing
- 2 tablespoons lime juice for dressing
- Salt and pepper to taste
Instructions:
- In a bowl, whisk together soy sauce, olive oil, lime juice, minced garlic, brown sugar, and black pepper. Add the flank steak to the marinade, cover, and refrigerate for 30 minutes.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, cilantro, mint, basil, and avocado; toss gently.
- Preheat the grill or grill pan over medium-high heat. Remove the beef from the marinade and grill for about 4-5 minutes on each side, or until desired doneness (130-145°F for medium-rare to medium). Let the beef rest for 5 minutes before slicing thinly against the grain.
- In a small bowl, whisk together olive oil, lime juice, and season with salt and pepper.
- Place the sliced beef over the salad and drizzle with dressing; toss gently to combine.
