Ingredients:

  • 4 boneless, skinless chicken breasts (1.5 lbs / 680 g)
  • 1/2 cup (120 ml) BBQ sauce (plus extra for serving)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 slices of cheese (cheddar, mozzarella, or your choice)
  • 4 whole-grain or brioche hamburger buns
  • 1 cup (150 g) coleslaw (for topping)
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. In a medium bowl, whisk together BBQ sauce, garlic powder, onion powder, salt, and pepper. Add chicken breasts and coat evenly; cover with plastic wrap or place in a resealable bag. Marinate for at least 30 minutes in the refrigerator.
  2. Heat grill to medium-high (about 400°F / 200°C).
  3. Remove chicken from marinade, letting excess drip off. Place chicken on the grill; cook for 6-8 minutes per side, or until internal temperature reaches 165°F (75°C).
  4. In the last 2 minutes of grilling, place a slice of cheese on each chicken breast to melt.
  5. Optionally, during the last minute of grilling, place buns on the grill to toast lightly.
  6. Place grilled chicken with melted cheese on the bottom half of each bun. Top with coleslaw and drizzle extra BBQ sauce. Close the sandwich with the top bun and serve.
