Ingredients:
- 4 boneless, skinless chicken breasts (1.5 lbs / 680 g)
- 1/2 cup (120 ml) BBQ sauce (plus extra for serving)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 slices of cheese (cheddar, mozzarella, or your choice)
- 4 whole-grain or brioche hamburger buns
- 1 cup (150 g) coleslaw (for topping)
- Fresh parsley or cilantro for garnish (optional)
Instructions:
- In a medium bowl, whisk together BBQ sauce, garlic powder, onion powder, salt, and pepper. Add chicken breasts and coat evenly; cover with plastic wrap or place in a resealable bag. Marinate for at least 30 minutes in the refrigerator.
- Heat grill to medium-high (about 400°F / 200°C).
- Remove chicken from marinade, letting excess drip off. Place chicken on the grill; cook for 6-8 minutes per side, or until internal temperature reaches 165°F (75°C).
- In the last 2 minutes of grilling, place a slice of cheese on each chicken breast to melt.
- Optionally, during the last minute of grilling, place buns on the grill to toast lightly.
- Place grilled chicken with melted cheese on the bottom half of each bun. Top with coleslaw and drizzle extra BBQ sauce. Close the sandwich with the top bun and serve.
