Ingredients:

  • 2 tablespoons (30 ml) lemon juice, freshly squeezed
  • 2 cloves garlic, minced (about 2 teaspoons)
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound (450g) boneless, skinless chicken breasts or thighs, thinly sliced
  • 1 cup (240ml) plain Greek yogurt (full fat or low fat)
  • ½ cup (60g) cucumber, grated and squeezed dry
  • 1 clove garlic, minced (about 1 teaspoon)
  • 1 tablespoon (15 ml) lemon juice, freshly squeezed
  • 1 tablespoon (15ml) chopped fresh dill
  • Salt and pepper to taste
  • 4 whole wheat tortillas or pita bread (approx. 8-10 inch diameter)
  • 1 cup (100g) shredded romaine lettuce
  • 1 cup (150g) chopped tomatoes
  • ½ cup (75g) thinly sliced red onion
  • ½ cup (50g) crumbled feta cheese (optional)
  • Kalamata olives, sliced (optional)

Instructions:

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the sliced chicken and toss to coat. Let marinate for at least 15 minutes (or up to 2 hours in the fridge).
  2. In a separate bowl, combine the Greek yogurt, grated and squeezed cucumber, minced garlic, lemon juice, and dill. Season with salt and pepper to taste. Refrigerate until ready to use.
  3. Heat a grill pan or frying pan over medium-high heat. Cook the marinated chicken until cooked through and lightly browned, about 3-5 minutes per side, depending on the thickness. Ensure internal temperature reaches 165°F (74°C). Let rest for a few minutes, then slice into strips.
  4. Warm the tortillas or pita bread according to package instructions (or in a dry pan for a few seconds per side).
  5. Spread a generous amount of tzatziki sauce on each tortilla. Top with shredded lettuce, chopped tomatoes, red onion, sliced chicken, and crumbled feta (if using).
  6. Fold in the sides of the tortilla, then roll from the bottom up to create a secure wrap.
