Ingredients:
- 6 cups fresh blackberries
- ¾ cup granulated sugar, plus more for sprinkling (optional)
- 2 tablespoons all-purpose flour, plus more for dusting
- 1 tablespoon lemon juice
- ½ teaspoon ground cinnamon
- Pinch of salt
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup (1 stick) unsalted butter, cold and cut into small cubes
- ½ cup milk
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, gently toss blackberries with sugar, flour, lemon juice, cinnamon, and salt.
- Pour the blackberry mixture into the prepared baking dish, spreading evenly.
- In a separate bowl, whisk together flour, sugar, baking powder, and salt.
- Cut the cold butter into the dry ingredients using a pastry blender (or your fingers) until the mixture resembles coarse crumbs.
- Stir in milk and vanilla extract until just combined. Do not overmix.
- Drop spoonfuls of the cobbler topping evenly over the blackberry filling. Leave some blackberry peeking through.
- Bake in a preheated oven at 375°F (190°C) for 40-45 minutes, or until the topping is golden brown and the filling is bubbling. A toothpick inserted into the topping should come out clean.
- Let cool slightly on a wire rack before serving.
