Ingredients:

  • 2 pounds (900g) sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (5g) sea salt
  • 1 teaspoon (5g) ground black pepper
  • 1 teaspoon (5g) paprika
  • ½ teaspoon (2g) garlic powder (optional)
  • ½ teaspoon (2g) dried thyme (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube sweet potatoes into 1-inch pieces uniform in size for even cooking.
  3. In a large mixing bowl, toss sweet potato cubes with olive oil, sea salt, black pepper, paprika, garlic powder, and thyme until evenly coated.
  4. Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the oven for 30-35 minutes, flipping halfway through, until golden brown and crispy on the edges.
  6. Remove from the oven and let cool slightly before serving.
