Ingredients:
- 2 pounds (900g) sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons (30ml) olive oil
- 1 teaspoon (5g) sea salt
- 1 teaspoon (5g) ground black pepper
- 1 teaspoon (5g) paprika
- ½ teaspoon (2g) garlic powder (optional)
- ½ teaspoon (2g) dried thyme (optional)
Instructions:
- Preheat your oven to 425°F (220°C).
- Peel and cube sweet potatoes into 1-inch pieces uniform in size for even cooking.
- In a large mixing bowl, toss sweet potato cubes with olive oil, sea salt, black pepper, paprika, garlic powder, and thyme until evenly coated.
- Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the oven for 30-35 minutes, flipping halfway through, until golden brown and crispy on the edges.
- Remove from the oven and let cool slightly before serving.
