Ingredients:
- 4 medium sweet potatoes (approximately 8-10 ounces/225-285g each), scrubbed clean
- 2 tablespoons olive oil
- 1 teaspoon kosher salt (or sea salt)
- Optional: Freshly ground black pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Scrub the sweet potatoes thoroughly under running water. Pat dry with paper towels.
- Using a fork, pierce each sweet potato several times. This prevents them from exploding in the oven!
- Place the sweet potatoes on a baking sheet (lined with parchment paper if desired). Drizzle with olive oil and rub all over the sweet potatoes. Sprinkle evenly with salt (and pepper, if using).
- Bake for 45-75 minutes, or until a fork easily pierces the center of the sweet potatoes and the skin is slightly wrinkled. Start checking at 45 minutes and adjust baking time as needed, based on the size of your sweet potatoes.
- Remove from oven and let cool slightly before serving. Cut open and enjoy!
