Ingredients:
- 2 lbs (900g) Yukon Gold potatoes, peeled and cut into 1-1.5 inch chunks
- 1 tbsp kosher salt, plus more to taste
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
Instructions:
- Place potato chunks in a large pot, cover with cold water, and add 1 tablespoon of kosher salt. Bring to a boil and cook for 8-10 minutes, or until slightly tender but not fully cooked.
- Drain the potatoes well in a colander. Return them to the pot (off the heat). Lightly bash the potatoes, roughing up the edges.
- Transfer the potatoes to a large mixing bowl. Drizzle with olive oil and sprinkle with garlic powder, onion powder, paprika, and pepper. Toss well to coat evenly.
- Preheat your air fryer to 400°F (200°C). Place the potatoes in the air fryer basket in a single layer (work in batches if needed).
