Ingredients:
- 6 oz baby spinach or arugula
- 1 lb fresh strawberries, hulled and sliced
- 4 oz goat cheese, crumbled
- 1/2 cup sliced almonds, toasted
- 1/4 cup fresh basil leaves, torn
- 1/3 cup extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Combine the balsamic vinegar, honey, mustard, salt, and pepper in a small glass jar or whisking bowl.
- Slowly whisk in the extra virgin olive oil until the dressing is smooth, glossy, and thickened.
- Place the baby spinach or arugula in a large mixing bowl.
- Drizzle half of the prepared balsamic vinaigrette over the greens and toss gently with tongs until shimmering and coated.
- Layer the sliced strawberries, torn basil leaves, and toasted almonds over the dressed greens.
- Gently sprinkle the crumbled goat cheese on top of the salad.
- Drizzle the remaining dressing over the fruit and cheese immediately before serving.
