Ingredients:

  • 6 oz baby spinach or arugula
  • 1 lb fresh strawberries, hulled and sliced
  • 4 oz goat cheese, crumbled
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup fresh basil leaves, torn
  • 1/3 cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Combine the balsamic vinegar, honey, mustard, salt, and pepper in a small glass jar or whisking bowl.
  2. Slowly whisk in the extra virgin olive oil until the dressing is smooth, glossy, and thickened.
  3. Place the baby spinach or arugula in a large mixing bowl.
  4. Drizzle half of the prepared balsamic vinaigrette over the greens and toss gently with tongs until shimmering and coated.
  5. Layer the sliced strawberries, torn basil leaves, and toasted almonds over the dressed greens.
  6. Gently sprinkle the crumbled goat cheese on top of the salad.
  7. Drizzle the remaining dressing over the fruit and cheese immediately before serving.
