Ingredients:

  • 1 lb (450g) fresh green beans, trimmed
  • 3 tablespoons (45ml) olive oil
  • 3 cloves garlic, minced
  • 1/4 cup (25g) grated Parmesan cheese, plus extra for sprinkling
  • 1/4 teaspoon red pepper flakes (optional, for a little kick)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon (7g) Panko breadcrumbs (optional, for extra crispiness)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (if using).
  2. Wash and thoroughly dry the green beans. Ensuring they are dry is key for browning.
  3. In a large bowl, whisk together the olive oil, minced garlic, red pepper flakes (if using), salt, and pepper.
  4. Add the green beans to the bowl and toss well to ensure they are evenly coated with the garlic oil mixture.
  5. Sprinkle the grated Parmesan cheese and Panko breadcrumbs (if using) over the green beans and toss again to distribute evenly.
  6. Spread the green beans in a single layer on the prepared baking sheet.
  7. Bake for 15-20 minutes, or until the green beans are tender-crisp and the Parmesan cheese is golden brown.
  8. Sprinkle with extra Parmesan cheese (if desired) and serve immediately.
