Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 1 tablespoon (15ml) olive oil
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • 1 teaspoon (5ml) garlic powder
  • 1/2 teaspoon (2.5ml) dried Italian herbs
  • 1/4 teaspoon (1.25ml) salt
  • 1/4 teaspoon (1.25ml) black pepper
  • 4 tablespoons (56g) unsalted butter, melted
  • 4 cloves garlic, minced (about 2 tablespoons)
  • 1/2 cup (50g) grated Parmesan cheese, finely grated
  • 2 tablespoons (30ml) chopped fresh parsley (optional, for garnish)

Instructions:

  1. Trim any excess fat from the chicken breasts. If breasts are thick, pound them to an even thickness (about 1/2 inch) for even cooking.
  2. In a bowl, whisk together olive oil, lemon juice, garlic powder, Italian herbs, salt, and pepper. Add the chicken breasts, turning to coat. Cover and refrigerate for at least 30 minutes, or up to 1 hour.
  3. Preheat grill to medium heat (about 350-400°F / 175-200°C). Clean the grill grates with a grill brush.
  4. In a separate bowl, combine melted butter and minced garlic. Mix well. Stir in the grated Parmesan cheese.
  5. Place the marinated chicken breasts on the preheated grill. Cook for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  6. During the last 2-3 minutes of grilling, brush the garlic Parmesan mixture generously over the chicken. Continue grilling until the cheese is melted and slightly golden.
  7. Remove the chicken from the grill and let it rest for 5 minutes before serving. Garnish with fresh parsley, if desired.
