Instructions:
- Prep the Beans: Ensure all green beans are washed, completely dry, and have the tough ends snapped or trimmed off. Patting them dry is crucial for achieving a good sear later.
- Heat the Fat: Place the skillet over medium-high heat. Add the olive oil and allow it to heat until it shimmers slightly—do not let it smoke.
- Sauté the Aromatics (Carefully): Add the sliced garlic to the hot oil. Sauté for about 60–90 seconds, stirring constantly, until fragrant and just beginning to turn pale gold. Watch them closely to prevent burning.
- Blister the Beans: Immediately add the prepared green beans to the skillet. Spread them into a single layer as much as possible and let them cook undisturbed for 2–3 minutes to start developing brown spots (blistering).
- Toss and Season: Toss the beans thoroughly with the garlic oil. Add the Kosher salt and pepper. Continue sautéing, tossing occasionally, for another 4–6 minutes until tender-crisp.
