Ingredients:

  • 2 lbs (900g) Mixed Vegetables (bell peppers, zucchini, yellow squash, red onion, carrots, broccoli)
  • 4 cloves Garlic, minced
  • 1/4 cup (60ml) Olive Oil, extra virgin
  • 2 tablespoons Fresh Herbs (rosemary, thyme, oregano, parsley), chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper, freshly ground
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • 2 tablespoons Balsamic Vinegar (optional)
  • Grated Parmesan Cheese (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and chop all the vegetables into roughly uniform, bite-sized pieces.
  3. In a large mixing bowl, combine the chopped vegetables, minced garlic, olive oil, chopped herbs, salt, pepper, and red pepper flakes (if using). Toss well.
  4. Spread the vegetable mixture in a single layer in a roasting pan. Avoid overcrowding.
  5. Roast for 35-45 minutes, or until the vegetables are tender and slightly caramelized, flipping halfway through.
  6. Remove from oven. Drizzle with balsamic vinegar (if using) and sprinkle with parmesan (if using).
