Ingredients:
- 6 medium ripe tomatoes, seeded and diced (about 2 lbs / 900g)
- 1 medium white onion, finely diced (about 1 cup / 150g)
- 1-2 jalapeño peppers, seeded and minced (depending on desired heat)
- 1 cup fresh cilantro, chopped (about 30g)
- 2-3 cloves garlic, minced (about 1 tablespoon)
- 1 lime, juiced (about 2 tablespoons / 30ml)
- 1 teaspoon kosher salt
- 1/4 teaspoon ground cumin (optional)
- Pinch of sugar (optional)
Instructions:
- Dice the tomatoes into small, even pieces. Gently scoop out most of the seeds.
- Finely dice the white onion. Mince the jalapeño, removing seeds for milder salsa. Wear gloves!
- Chop the cilantro. Mince the garlic (or use a garlic press).
- In a medium mixing bowl, combine the diced tomatoes, onion, jalapeño, cilantro, and garlic.
- Add the lime juice, kosher salt, cumin (if using), and sugar (if using). Gently stir together.
- Taste the salsa and adjust the seasoning as needed. Add more salt, lime juice, or jalapeño to your preference.
- For best flavor, cover and refrigerate for at least 30 minutes.
- Serve the salsa with tortilla chips, tacos, grilled meats, or your favorite Mexican-inspired dishes.
