Ingredients:

  • 6 medium ripe tomatoes, seeded and diced (about 2 lbs / 900g)
  • 1 medium white onion, finely diced (about 1 cup / 150g)
  • 1-2 jalapeño peppers, seeded and minced (depending on desired heat)
  • 1 cup fresh cilantro, chopped (about 30g)
  • 2-3 cloves garlic, minced (about 1 tablespoon)
  • 1 lime, juiced (about 2 tablespoons / 30ml)
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground cumin (optional)
  • Pinch of sugar (optional)

Instructions:

  1. Dice the tomatoes into small, even pieces. Gently scoop out most of the seeds.
  2. Finely dice the white onion. Mince the jalapeño, removing seeds for milder salsa. Wear gloves!
  3. Chop the cilantro. Mince the garlic (or use a garlic press).
  4. In a medium mixing bowl, combine the diced tomatoes, onion, jalapeño, cilantro, and garlic.
  5. Add the lime juice, kosher salt, cumin (if using), and sugar (if using). Gently stir together.
  6. Taste the salsa and adjust the seasoning as needed. Add more salt, lime juice, or jalapeño to your preference.
  7. For best flavor, cover and refrigerate for at least 30 minutes.
  8. Serve the salsa with tortilla chips, tacos, grilled meats, or your favorite Mexican-inspired dishes.
