Ingredients:
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract (5ml)
- 3/4 cup (90g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 1/4 teaspoon baking powder (1.25ml)
- 1/4 teaspoon salt (1.25ml)
- 1/2 cup (85g) semi-sweet chocolate chips or chunks (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan, or line with parchment paper.
- Melt butter in the microwave or in a saucepan.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
- Whisk in the eggs one at a time, followed by the vanilla extract. Ensure each egg is fully incorporated before adding the next.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Stir in the chocolate chips or chunks, if using.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the centre comes out with moist crumbs attached. The top should be slightly crackled and the edges pulling away from the sides of the pan.
- Let the brownies cool completely in the pan before cutting into squares. Chilling the brownies slightly before cutting will give you cleaner slices.
