Ingredients:

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract (5ml)
  • 3/4 cup (90g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/4 teaspoon baking powder (1.25ml)
  • 1/4 teaspoon salt (1.25ml)
  • 1/2 cup (85g) semi-sweet chocolate chips or chunks (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan, or line with parchment paper.
  2. Melt butter in the microwave or in a saucepan.
  3. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
  4. Whisk in the eggs one at a time, followed by the vanilla extract. Ensure each egg is fully incorporated before adding the next.
  5. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  7. Stir in the chocolate chips or chunks, if using.
  8. Pour the batter into the prepared baking pan and spread evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the centre comes out with moist crumbs attached. The top should be slightly crackled and the edges pulling away from the sides of the pan.
  10. Let the brownies cool completely in the pan before cutting into squares. Chilling the brownies slightly before cutting will give you cleaner slices.
