Ingredients:
- 1 cup (125 g) all-purpose flour
- ½ teaspoon kosher salt
- ½ cup (120 ml) hot water
- 4-6 scallions (green onions), finely chopped
- 1 tablespoon sesame oil (or vegetable oil)
- Freshly ground black pepper, to taste
- 2 tablespoons vegetable oil (for frying)
Instructions:
- In a mixing bowl, combine flour and salt.
- Gradually add hot water, stirring until a rough dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth.
- Cover with a damp towel and let rest for 30 minutes.
- In a small bowl, mix chopped scallions with sesame oil and black pepper.
- Divide the rested dough into 4 equal pieces.
- Roll each portion into a thin round.
- Brush a thin layer of oil on the rolled dough, sprinkle scallion mixture evenly, and roll up into a log shape.
- Coil the log into a round shape and flatten gently with your palm.
- Use a rolling pin to roll into a thin pancake.
- Heat vegetable oil in a non-stick skillet over medium heat.
- Fry each pancake for 3-4 minutes per side, or until golden brown and crispy.
- Drain on paper towels if needed and keep warm.
- Cut into wedges and serve warm, optionally with soy sauce or another dipping sauce.
