Ingredients:

  • 1 cup (125 g) all-purpose flour
  • ½ teaspoon kosher salt
  • ½ cup (120 ml) hot water
  • 4-6 scallions (green onions), finely chopped
  • 1 tablespoon sesame oil (or vegetable oil)
  • Freshly ground black pepper, to taste
  • 2 tablespoons vegetable oil (for frying)

Instructions:

  1. In a mixing bowl, combine flour and salt.
  2. Gradually add hot water, stirring until a rough dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Cover with a damp towel and let rest for 30 minutes.
  5. In a small bowl, mix chopped scallions with sesame oil and black pepper.
  6. Divide the rested dough into 4 equal pieces.
  7. Roll each portion into a thin round.
  8. Brush a thin layer of oil on the rolled dough, sprinkle scallion mixture evenly, and roll up into a log shape.
  9. Coil the log into a round shape and flatten gently with your palm.
  10. Use a rolling pin to roll into a thin pancake.
  11. Heat vegetable oil in a non-stick skillet over medium heat.
  12. Fry each pancake for 3-4 minutes per side, or until golden brown and crispy.
  13. Drain on paper towels if needed and keep warm.
  14. Cut into wedges and serve warm, optionally with soy sauce or another dipping sauce.
