Ingredients:

  • 2 cups (300g) fresh broccoli florets, finely chopped
  • 1 cup (120g) shredded cheddar cheese
  • 1/2 cup (60g) grated Parmesan cheese
  • 1/2 cup (70g) breadcrumbs (preferably Italian seasoned)
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup (120g) additional breadcrumbs
  • Oil for frying (vegetable or canola)

Instructions:

  1. Steam or blanch broccoli florets until just tender, about 3-4 minutes. Drain and finely chop.
  2. In a large mixing bowl, combine chopped broccoli, cheddar, Parmesan, breadcrumbs, beaten eggs, garlic powder, salt, and pepper. Mix until well combined.
  3. Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up.
  4. Once chilled, scoop the mixture and roll it into balls, about 1 inch in diameter.
  5. Roll each ball in the additional breadcrumbs to coat evenly.
  6. In a deep pot or fryer, heat oil to 350°F (175°C).
  7. Fry the balls in batches until golden brown, about 3-4 minutes per batch. Use a slotted spoon to remove and drain on a cooling rack.
  8. Enjoy warm, paired with your favorite dipping sauce.
