Ingredients:
- 2 cups (300g) fresh broccoli florets, finely chopped
- 1 cup (120g) shredded cheddar cheese
- 1/2 cup (60g) grated Parmesan cheese
- 1/2 cup (70g) breadcrumbs (preferably Italian seasoned)
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup (120g) additional breadcrumbs
- Oil for frying (vegetable or canola)
Instructions:
- Steam or blanch broccoli florets until just tender, about 3-4 minutes. Drain and finely chop.
- In a large mixing bowl, combine chopped broccoli, cheddar, Parmesan, breadcrumbs, beaten eggs, garlic powder, salt, and pepper. Mix until well combined.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up.
- Once chilled, scoop the mixture and roll it into balls, about 1 inch in diameter.
- Roll each ball in the additional breadcrumbs to coat evenly.
- In a deep pot or fryer, heat oil to 350°F (175°C).
- Fry the balls in batches until golden brown, about 3-4 minutes per batch. Use a slotted spoon to remove and drain on a cooling rack.
- Enjoy warm, paired with your favorite dipping sauce.
