Ingredients:
- 2 cups all-purpose flour (240g), plus extra for dusting
- 3 large eggs (150g)
- 1 teaspoon salt (5g)
Instructions:
- Combine flour and salt in a mound on a clean surface or in a mixing bowl. Create a well in the center and crack the eggs into the well. Using a fork, gradually incorporate the flour into the eggs until combined.
- Bring the dough together with your hands and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.
- Divide the rested dough into smaller pieces. Using a rolling pin or pasta machine, roll out each piece to a desired thickness (approximately 1/16 inch or 1.5 mm).
- Dust the rolled dough with flour and fold or roll loosely. Using a knife or bench scraper, cut the dough into spaghetti-sized strips. Unravel the noodles and lay them flat on a floured surface.
- Boil a pot of salted water. Cook the fresh noodles for 3-5 minutes until al dente. Drain and toss with your favorite sauce.
