Ingredients:
- 1 large (10 oz / 280g) yellow onion, thinly sliced
- 2 tbsp (28g) unsalted butter
- 1 tsp (5ml) balsamic vinegar
- ½ tsp (3g) kosher salt
- ¼ tsp (1.5g) cracked black pepper
- 1 sheet (17.3 oz / 490g) frozen puff pastry, thawed and rolled
- 4 oz (113g) Brie cheese, chilled and cubed into ½ inch pieces
- ¼ cup (60ml) fig jam
- 1 large egg
- 1 tbsp (15ml) water
Instructions:
- Melt butter in the skillet over medium-high heat until bubbling.
- Add sliced onions and salt; sauté for 8–10 minutes, stirring occasionally, until the edges are deep brown.
- Stir in the balsamic vinegar and pepper to deglaze the pan and coat the onions. Remove from heat and let cool slightly.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the puff pastry sheet into 12 or 16 equal squares (approximately 3x3 inches).
- Place one square on the parchment, spoon ½ tsp of fig jam into the center, then top with a cube of chilled brie and a small pinch of caramelized onions.
- Fold the corners of the pastry toward the center, pinching slightly to secure the filling.
- Whisk together the egg and water, then brush the top of each puff generously with the wash.
- Bake for 12–15 minutes until the pastry has puffed significantly and the edges are golden brown.
