Ingredients:
- 1 cup (125g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1 cup (240ml) buttermilk
- 2 tablespoons (30g) unsalted butter, melted
Instructions:
- In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the egg, buttermilk, and melted butter until combined.
- Pour the wet mixture into the dry ingredients and gently fold the mixture until just combined.
- Heat a non-stick frying pan or griddle over medium heat and add a little butter to coat.
- Pour 1/4 cup of batter onto the hot pan. Cook until bubbles form on the surface, then flip carefully.
- Cook until golden brown on the other side (about 1-2 minutes).
- Continue cooking until all batter is used, adding more butter to the pan as needed.
- Serve immediately with desired toppings.
