Ingredients:

  • 1 cup (125g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup (240ml) buttermilk
  • 2 tablespoons (30g) unsalted butter, melted

Instructions:

  1. In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the egg, buttermilk, and melted butter until combined.
  3. Pour the wet mixture into the dry ingredients and gently fold the mixture until just combined.
  4. Heat a non-stick frying pan or griddle over medium heat and add a little butter to coat.
  5. Pour 1/4 cup of batter onto the hot pan. Cook until bubbles form on the surface, then flip carefully.
  6. Cook until golden brown on the other side (about 1-2 minutes).
  7. Continue cooking until all batter is used, adding more butter to the pan as needed.
  8. Serve immediately with desired toppings.
