Ingredients:
- 1 1/2 cups (192g) all-purpose flour
- 3 1/2 teaspoons (15g) baking powder
- 1/4 teaspoon (1.5g) salt
- 1 tablespoon (12g) granulated sugar
- 1 1/4 cups (300ml) milk
- 1 large egg
- 3 tablespoons (45ml) unsalted butter, melted, plus more for greasing the pan
Instructions:
- Whisk together flour, baking powder, salt, and sugar in a large bowl.
- In a separate bowl, whisk together milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are fine! Don't overmix!
- Heat a lightly oiled griddle or frying pan over medium heat. You should be able to flick a bit of water on it, and it should sizzle.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface and the edges start to set.
- Flip the pancakes and cook for another 2-3 minutes, or until golden brown on the other side.
- Serve warm with your favourite toppings.
