Ingredients:

  • 1 1/2 cups (192g) all-purpose flour
  • 3 1/2 teaspoons (15g) baking powder
  • 1/4 teaspoon (1.5g) salt
  • 1 tablespoon (12g) granulated sugar
  • 1 1/4 cups (300ml) milk
  • 1 large egg
  • 3 tablespoons (45ml) unsalted butter, melted, plus more for greasing the pan

Instructions:

  1. Whisk together flour, baking powder, salt, and sugar in a large bowl.
  2. In a separate bowl, whisk together milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are fine! Don't overmix!
  4. Heat a lightly oiled griddle or frying pan over medium heat. You should be able to flick a bit of water on it, and it should sizzle.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface and the edges start to set.
  7. Flip the pancakes and cook for another 2-3 minutes, or until golden brown on the other side.
  8. Serve warm with your favourite toppings.
