Ingredients:
- 2 cups (240g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs, separated
- 1 3/4 cups (420ml) buttermilk
- 1/2 cup (115g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
Instructions:
- Preheat the waffle iron according to the manufacturer's instructions.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the egg yolks and add the buttermilk, melted butter, and vanilla. Mix until smooth.
- Combine the wet and dry ingredients, mixing just until combined (some lumps are okay).
- In a separate bowl, whisk the egg whites until soft peaks form. Carefully fold the egg whites into the batter.
- Grease the waffle iron lightly with a non-stick spray or melted butter.
- Pour the batter into the preheated waffle iron, spreading it evenly. Close the lid and cook until golden brown, usually 4-5 minutes.
- Carefully remove the waffles and keep warm in a low oven while you repeat with the remaining batter.
