Ingredients:

  • 2 cups (240g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, separated
  • 1 3/4 cups (420ml) buttermilk
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the egg yolks and add the buttermilk, melted butter, and vanilla. Mix until smooth.
  4. Combine the wet and dry ingredients, mixing just until combined (some lumps are okay).
  5. In a separate bowl, whisk the egg whites until soft peaks form. Carefully fold the egg whites into the batter.
  6. Grease the waffle iron lightly with a non-stick spray or melted butter.
  7. Pour the batter into the preheated waffle iron, spreading it evenly. Close the lid and cook until golden brown, usually 4-5 minutes.
  8. Carefully remove the waffles and keep warm in a low oven while you repeat with the remaining batter.
