Ingredients:

  • 1 cup (120g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1 cup (240ml) buttermilk (or milk with 1 teaspoon vinegar)
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Chocolate chips or small round candies (for eyes)
  • Whipped cream (for serving)
  • Fresh fruit (such as strawberries or blueberries, for garnish)

Instructions:

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Mix until smooth.
  3. Pour the wet ingredients into the dry ingredients. Gently fold together until just combined.
  4. Preheat a skillet or griddle over medium heat and grease lightly with butter or oil.
  5. Use a ladle or measuring cup to pour batter onto the skillet (about 1/4 cup for each pancake).
  6. Cook until bubbles form on the surface and the edges look set (2-3 minutes). Flip and cook until golden brown on the other side (1-2 minutes).
  7. Use a Hello Kitty-shaped cookie cutter to cut out pancakes.
  8. Decorate the pancakes with chocolate chips as eyes. Serve warm with whipped cream and fresh fruit.
