- 1 cup (240ml) buttermilk (or milk with 1 teaspoon vinegar)
- 1 large egg
- 2 tablespoons (30g) unsalted butter, melted
- 1 teaspoon vanilla extract
- Chocolate chips or small round candies (for eyes)
- Whipped cream (for serving)
- Fresh fruit (such as strawberries or blueberries, for garnish)
Instructions:
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients. Gently fold together until just combined.
- Preheat a skillet or griddle over medium heat and grease lightly with butter or oil.
- Use a ladle or measuring cup to pour batter onto the skillet (about 1/4 cup for each pancake).
- Cook until bubbles form on the surface and the edges look set (2-3 minutes). Flip and cook until golden brown on the other side (1-2 minutes).
- Use a Hello Kitty-shaped cookie cutter to cut out pancakes.
- Decorate the pancakes with chocolate chips as eyes. Serve warm with whipped cream and fresh fruit.
