Ingredients:
- 1 pound (450g) boneless, skinless chicken breasts
- 2 tablespoons (30ml) olive oil
- 2 tablespoons (30g) Hello Fresh Southwest Spice Blend
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup (150g) diced tomatoes
- 1 cup (150g) shredded lettuce
- 1 avocado, sliced
- 1/2 cup (120ml) sour cream or Greek yogurt
- 1 lime, cut into wedges
- Fresh cilantro, for garnish (optional)
- 1 cup (150g) black beans, rinsed and drained (optional)
- 1/2 cup (75g) shredded cheddar cheese (optional)
Instructions:
- Slice chicken breasts into strips.
- In a mixing bowl, toss the chicken with olive oil, Hello Fresh Southwest Spice Blend, and salt and pepper.
- Heat a non-stick skillet over medium-high heat.
- Add seasoned chicken to the skillet, cooking for about 5-7 minutes until browned and cooked through (internal temperature should reach 165°F/74°C). Stir occasionally.
- While chicken cooks, warm tortillas in a separate skillet or microwave until pliable.
- Layer each warm tortilla with cooked chicken, diced tomatoes, shredded lettuce, avocado slices, and a dollop of sour cream.
- Serve tacos with lime wedges and sprinkle fresh cilantro if desired. Enjoy!
