Ingredients:

  • 1 pound (450g) boneless, skinless chicken breasts
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (30g) Hello Fresh Southwest Spice Blend
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup (150g) diced tomatoes
  • 1 cup (150g) shredded lettuce
  • 1 avocado, sliced
  • 1/2 cup (120ml) sour cream or Greek yogurt
  • 1 lime, cut into wedges
  • Fresh cilantro, for garnish (optional)
  • 1 cup (150g) black beans, rinsed and drained (optional)
  • 1/2 cup (75g) shredded cheddar cheese (optional)

Instructions:

  1. Slice chicken breasts into strips.
  2. In a mixing bowl, toss the chicken with olive oil, Hello Fresh Southwest Spice Blend, and salt and pepper.
  3. Heat a non-stick skillet over medium-high heat.
  4. Add seasoned chicken to the skillet, cooking for about 5-7 minutes until browned and cooked through (internal temperature should reach 165°F/74°C). Stir occasionally.
  5. While chicken cooks, warm tortillas in a separate skillet or microwave until pliable.
  6. Layer each warm tortilla with cooked chicken, diced tomatoes, shredded lettuce, avocado slices, and a dollop of sour cream.
  7. Serve tacos with lime wedges and sprinkle fresh cilantro if desired. Enjoy!
