Ingredients:
- 1 lb (450 g) ground pork or ground beef
- 1/2 cup (60 g) breadcrumbs
- 1/4 cup (60 g) green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 large egg
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 cup (60 ml) soy sauce (for sauce)
- 1/4 cup (60 g) honey or maple syrup
- 2 tablespoons rice vinegar
- 1 tablespoon Sriracha
- 1 teaspoon red pepper flakes (optional)
- 1 tablespoon water (to thin, if necessary)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground pork or beef, breadcrumbs, green onions, garlic, ginger, egg, soy sauce, sesame oil, black pepper, and salt.
- Mix until just combined; do not overmix.
- Using your hands or a scoop, form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
- Refrigerate for 30 minutes to help them set.
- Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F (70°C).
- In a small saucepan, whisk together soy sauce, honey, rice vinegar, Sriracha, and red pepper flakes over medium heat.
- Simmer for 3-5 minutes until slightly thickened.
- In a large mixing bowl, toss baked meatballs with firecracker sauce until well coated.
- Garnish with additional green onions or sesame seeds if desired and enjoy!
