Ingredients:

  • 1 lb Lean Ground Beef (85/15 recommended)
  • 1 tbsp Olive Oil
  • 1 medium Yellow Onion, finely diced
  • 2 cloves Garlic, minced
  • 2 tbsp Taco Seasoning Mix
  • ½ cup Water or Beef Broth
  • Pinch of Salt and Black Pepper
  • ½ cup Mayonnaise
  • ¼ cup Plain Greek Yogurt
  • 2 tbsp Fresh Lime Juice
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Ground Cumin
  • ½ tsp Chili Powder
  • ¼ tsp Onion Powder
  • 2 tbsp Water (for dressing, if needed)
  • 1 large head Romaine Lettuce, chopped
  • 1 cup Cherry or Grape Tomatoes, halved
  • 1 medium Avocado, diced
  • 1 cup Shredded Mexican Cheese Blend
  • ½ cup Canned Black Beans, rinsed and drained
  • ¼ cup Sliced Black Olives (optional)
  • ¼ cup Fresh Cilantro, roughly chopped
  • 4 large (10-inch) Flour Tortillas (Optional for bowls)
  • Non-stick Cooking Spray or 1 tbsp Melted Butter

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly spray or brush tortillas with oil/butter. Gently press each tortilla into an oven-safe bowl or mold to form a cup shape. Bake for 10–12 minutes until crisp and golden brown. Set aside to cool.
  2. Heat oil in a skillet over medium-high heat. Sauté the diced onion until soft (about 3 minutes). Add ground beef and cook, breaking it up, until browned. Drain off any excess fat.
  3. Stir in minced garlic, taco seasoning, salt, and pepper. Cook for 1 minute until fragrant. Pour in the water/broth and simmer until the liquid has mostly evaporated (about 5 minutes). Keep warm.
  4. In a medium bowl, whisk together all dressing ingredients (mayonnaise, yogurt, lime juice, vinegar, cumin, chili powder, onion powder, salt, and pepper). Add 1-2 tbsp of water if needed to reach a drizzly consistency.
  5. In the large serving bowl, gently toss the chopped romaine lettuce with half of the zesty dressing until lightly coated.
  6. Arrange the dressed lettuce on a platter or divide among the cooled tortilla bowls. Layer the warm seasoned beef over the top.
  7. Top generously with tomatoes, diced avocado, black beans, shredded cheese, and black olives. Drizzle the remaining dressing over the top.
  8. Garnish with fresh cilantro and serve immediately for the best temperature contrast.
