Ingredients:
- 12 mini meringue nests
- 1 cup (240 ml) heavy cream, cold
- 2 tablespoons (25 g) powdered sugar, sifted
- 1/2 teaspoon vanilla extract
- 1/2 cup (75 g) fresh strawberries, hulled and quartered
- 1/2 cup (75 g) fresh raspberries
- 1/2 cup (75 g) fresh blueberries
- 1 tablespoon (15 ml) lemon juice
- 1/2 cup (75 g) mixed berries (strawberries, raspberries, blackberries)
- 1 tablespoon (15 ml) water
- 1 tablespoon (12.5 g) granulated sugar
Instructions:
- Combine berries, water, and sugar in a saucepan. Simmer until berries break down and sauce thickens. Strain (optional). Cool.
- Beat heavy cream with an electric mixer until soft peaks form. Add powdered sugar and vanilla extract. Beat until stiff peaks form.
- Gently toss strawberries, raspberries, blueberries, and lemon juice together.
- Spoon or pipe whipped cream into each meringue nest. Top with the berry mixture. Drizzle with berry coulis (if using).
- Refrigerate for at least 30 minutes before serving.
