Ingredients:

  • 12 mini meringue nests
  • 1 cup (240 ml) heavy cream, cold
  • 2 tablespoons (25 g) powdered sugar, sifted
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (75 g) fresh strawberries, hulled and quartered
  • 1/2 cup (75 g) fresh raspberries
  • 1/2 cup (75 g) fresh blueberries
  • 1 tablespoon (15 ml) lemon juice
  • 1/2 cup (75 g) mixed berries (strawberries, raspberries, blackberries)
  • 1 tablespoon (15 ml) water
  • 1 tablespoon (12.5 g) granulated sugar

Instructions:

  1. Combine berries, water, and sugar in a saucepan. Simmer until berries break down and sauce thickens. Strain (optional). Cool.
  2. Beat heavy cream with an electric mixer until soft peaks form. Add powdered sugar and vanilla extract. Beat until stiff peaks form.
  3. Gently toss strawberries, raspberries, blueberries, and lemon juice together.
  4. Spoon or pipe whipped cream into each meringue nest. Top with the berry mixture. Drizzle with berry coulis (if using).
  5. Refrigerate for at least 30 minutes before serving.
