Ingredients:

  • 4 ears of sweet corn (or 2 cups of frozen corn)
  • ½ cup mayonnaise (120 ml)
  • ½ cup sour cream (120 ml)
  • 1 cup crumbled cotija cheese (100 g)
  • 1 teaspoon chili powder (5 g)
  • 2 tablespoons lime juice (30 ml)
  • 1 teaspoon garlic powder (5 g)
  • Salt to taste
  • Fresh cilantro, chopped (optional for garnish)

Instructions:

  1. If using fresh corn, grill or boil until tender (about 8-10 minutes). If using frozen corn, sauté in a pan for about 5-7 minutes until heated through and lightly golden.
  2. In a large mixing bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, and salt until smooth.
  3. Once the corn is cooked, cut the kernels off the cob if using fresh corn, or use it straight from the package if using frozen. Add the corn to the bowl with the dressing and mix well to ensure all kernels are coated.
  4. Spoon the corn mixture into cups, filling them generously. Top with crumbled cotija cheese and a sprinkle of chili powder. If desired, garnish with chopped cilantro.
