Ingredients:
- 6 English muffins, split and toasted
- 8 slices cooked ham, sliced
- 8 large eggs
- 1 cup shredded cheddar cheese
- ½ cup (1 stick) unsalted butter, melted
- 3 large egg yolks
- 2 tablespoons lemon juice, freshly squeezed
- 1/4 teaspoon salt
- ⅛ teaspoon cayenne pepper
- 2 tablespoons water
Instructions:
- Toast English muffin halves until golden brown. Set aside.
- Lightly sauté the ham slices in a skillet until heated through.
- Arrange the toasted English muffins in the baking dish.
- Top with sliced ham.
- Sprinkle with cheddar cheese.
- In a bowl, whisk eggs and seasoning; pour over the muffin layer in baking dish.
- Whisk melted butter, egg yolks, lemon juice, salt, cayenne pepper, and water in a mixing bowl until well combined.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until eggs are set and casserole is golden brown.
- Remove from oven and let cool slightly before pouring Hollandaise Sauce evenly over entire casserole.
- Let the casserole rest for 5-10 minutes before serving.
