Ingredients:
- 2 large (approx. 1.5 lbs / 680g) eggplants, sliced into 1/4 inch rounds
- 3 tbsp (45ml) extra virgin olive oil
- 1 tsp (6g) kosher salt
- 1 lb (450g) lean ground beef (90% lean)
- 1 medium (150g) yellow onion, finely diced
- 3 cloves (15g) garlic, minced
- 24 oz (680g) marinara sauce
- 1 tsp (2g) dried oregano
- ½ tsp (1g) red pepper flakes
- 2 cups (225g) shredded mozzarella cheese
- ½ cup (50g) freshly grated Parmesan cheese
- 2 tbsp (8g) chopped fresh basil
Instructions:
- Preheat your oven to 400°F (200°C).
- Arrange eggplant rounds on a parchment-lined baking sheet. Brush both sides with olive oil and sprinkle with salt.
- Roast for 15-20 minutes, flipping halfway through, until the slices are tender and exhibit golden-brown edges. Set aside.
- In a large skillet over medium-high heat, add the ground beef. Cook, breaking it apart with a spoon, until mahogany-colored and fully browned. Drain excess fat.
- Stir in the diced onion and cook for 4-5 minutes until translucent. Add minced garlic and cook for another 60 seconds until fragrant.
- Pour in the marinara sauce, oregano, and red pepper flakes. Simmer on low for 10 minutes until the sauce thickens and clings to the beef.
- In a 9x13 inch baking dish, create structural shelves by alternating thin slices of roasted eggplant with the reduced beef sauce.
- Top the final layer with shredded mozzarella and grated Parmesan cheese.
- Bake until the cheese is bubbling and golden-brown.
- Garnish with chopped fresh basil before serving.
